Efeito da adição de sulfato de amônio sobre a produção de ácido succínico durante a fermentação alcoólica Anais da ESALQ

A produção de ácido succínico por leveduras durante a fermentação alcoólica de mosto de melaço suplementado com 25, 50 e 100 ppm de nitrogênio na forma de sulfato de amônio foi determinada por cromatografia em fase gasosa. A adição de nitrogênio amoniacal não afetou significativamente a produção de álcool etílico. Houve redução significativa no teor de ácido succínico com o aumento da quantidade de nitrogênio adicionada.

Efeito da adição de sulfito sobre a produção de alcoóis superiores durante a fermentação alcoólica Anais da ESALQ

Foi estudado o efeito de quatro concentrações de sulfito (19, 69, 119, 219 ppm) em mostos de melaço de cana em pH 4,O e o efeito do pH de mosto sulfitado sobre a produção de etanol, acetaldeído e os alcoóis n-propílico, isobutílico e isoamílico durante a fermentação alcoólica por Saccharomyces cerevisiae. Não foram detectadas diferenças significativas entre os teores de etanol dos mostos sulfitados. Houve aumento significativo no teor de acetaldeído e redução significativa nos teores de alcoóis superiores com o aumento da concentração de sulfito. A elevação do pH do mosto sulfitado provocou aumento significativo nos teores de acetaldeído e alcoóis superiores não afetando a produção de etanol.

Efeito dos ácidos fórmico e propiônico sobre a produção de alcoóis superiores durante a fermentação alcoólica Anais da ESALQ

Foi estudado o efeito de concentrações de 250, 500 e 1000 ppm dos ácidos fórmico e propiônico sobre a produção de etanol e alcoóis superiores produzidos pela fermentação alcoólica de mosto sintético. Não foram detectadas diferenças significativas entre os tratamentos tanto para o ácido fórmico como para o ácido propiônico, embora uma redução não significativa no teor do álcool isoamílico foi observada com a dose de 1000 ppm dos ácidos fórmico e propiônico.

O efeito da radiação gama e baixas temperaturas foi estudado no crescimento de Saccharomyces cerevisiae em suco de laranja. O suco concentrado de laranja (65°Brix) foi diluído a 10,5°Brix e inoculado com levedura comercial. As amostras foram irradiadas com doses de 1,0, 1,5, 2,0, 2,5, 5,0 e 7,5 kGy (Cobalto 60), a uma taxa de dose de 2,83 kGy/h. Todas as amostras foram armazenadas a 0°, 5° e 25°C, por 1, 7, 14, 21, 30, 60 e 90 dias. O tratamento combinado de 1 kGy e refrigeração a 0°C foi efetivo para a conservação do suco de laranja por 90 dias de armazenamento. ABSTRACT The present study was conducted to evaluate the performance, carcass yield, and histomorphometry of the small intestine of broilers fed yeast sugarcane supplemented with enzymatic blend from 22 to 42 days of age. Seven hundred broiler chicks were distributed in a completely randomized design in a factorial design (2x3+1), two levels of the enzyme blend (0 and 200 g/ton), three protein levels (0%, 6% and 12%) and a control diet. Five castrated and ruminally cannulated Saanen goats (±48.19kg) were used to evaluate intake, digestibility and rumen fermentation parameters of diets with inactive dry yeast as a soybean meal substitute (0, 25, 50, 75 and 100%). Goats were randomly assigned to a 5×5 (five levels of dry yeast x five periods) Latin square design. Diets were composed of corn silage (40%), ground corn, soybean meal and/or dry yeast and mineral supplement. The current study investigated the effect of dietary supplementation with probiotics and Yucca schidigera extract on physicochemical parameters, proximate composition, mineral content and fatty acid profile of broiler breast and thigh muscles. Effect of raffinose and ultrasound pulses on invertase release by free and immobilized Saccharomyces cerevisiae in loofa (Luffa cylindrica) sponge BABT

This study investigated the effect of raffinose and ultrasound pulses on invertase release from free S. cerevisiae and S. cerevisiae immobilized in Luffa cylindrica. The free cell culture was submitted to 2% raffinose pulse and irradiated for 2 minutes at 0.12 and 0.46 h-1 dilution rates. The immobilized cell culture was submitted to raffinose pulse and irradiated for 1, 2 and 4 minutes, at 0.10 h-1 dilution rate. In immobilized cells, the raffinose pulse increased the invertase activity from 5.38 to 7.27 U/mg. Ultrasound application in free cell culture at the 0.12 h-1 dilution rate gave the best results. Effects of pH and temperature on growth and glycerol production kinetics of two indigenous wine strains of Saccharomyces cerevisiae from Turkey BJM

The study was performed in a batch system in order to determine the effects of pH and temperature on growth and glycerol production kinetics of two indigenous wine yeast strains Saccharomyces cerevisiae Kalecik 1 and Narince 3. The highest values of dry mass and specific growth rate were obtained at pH 4.00 for both of the strains. Maximum specific glycerol production rates were obtained at pH 5.92 and 6.27 for the strains Kalecik 1 and Narince 3, respectively. Kalecik 1 strain produced maximum 8.8 gL-1 of glycerol at pH 6.46. Modulation of cell endogenous membrane potential by an external electrical field influences the structure and function of membrane compartments, proteins and lipid bi-layer. In this work, the effects of applied potential on Saccharomyces cerevisiae growth were characterized through simple yet conclusive experiments. Cell growth time profile and cell division were investigated as macroscopic response to the electrical stimulation. Control experiments were conducted under identical conditions except for the absence of applied potential. Energy cultures are emerging as viable renewable energy sources because they satisfy sustainability requirements. The present study involves a survey regarding the technological characteristics for sugarcane and sweet sorghum energy crops, in addition to their potential for bioethanol production. An exploratory survey was conducted regarding the agronomic and technological characteristics of cane and sorghum. Abstract Ethanol production from sweet sorghum juice (SSJ) using the thermotolerant Saccharomyces cerevisiae strain DBKKUY-53 immobilized in an alginate-loofah matrix (ALM) was successfully developed. As found in this study, an ALM with dimensions of 20 × 20 × 5 mm3 is effective for cell immobilization due to its compact structure and long-term stability. There are a large number of S. cerevisiae strains with varying abilities to produce cytochrome P-450. However, strain selection and ideal cultivation conditions are not well defined. We compared cytochrome P-450 levels in four different S. cerevisiae strains and evaluated the cultivation conditions necessary to obtain the highest levels. The amount of cytochrome P-450 produced by each strain varied, as did the incubation time needed to reach the maximum level.
